Carpaccio of saint jaques avocado citrus fruits and Bora Bora salt with vanilla.

For 2 people


4 saint jaques

1 avocado

1 lime

1 orange

A pinch of curry

A few coriander leaves Olive oil

A small new onion Salicornia Mild red pepper Vanilla salt


Season the saint jaque with a pinch of vanilla salt and put in the fridge for 30 minutes. Mash the avocado with a fork and season with lime zest, juice of half a lime, a pinch of curry and a pinch of salt and a few coriander leaves and a small spring onion.

Lift the citrus segments and cut into small cubes

Cook the samphire for 1 minute in boiling water and cool in ice water.

Prepare a marinade with half a lime juice, half an orange juice, sweet pepper and 3 tablespoons of olive oil.

Cut the scallops into 4 thin slices and put them in the marinade for 2 minutes

Arrange in the shell a find of avocado and arrange in 8 trays rosette

Finishing, a small cube of orange, a sprig of glasswort, a slice of spring onion green and the final touch a pinch of Bora Bora vanilla salt.
